Snow and Fermenting
Winter is finally here in at Pickle Patch Gardens.
It started snowing this past Monday and it looks like it is here to stay for the rest of 2018! It's one of those things that you know is going to happen every year, but when it does it is still a surprise!
The garden is all out and for the most part everything is put up for the winter. We are still currently working on tomatoes, cabbage and beets. It seems as though they will never end!
For our tomatoes we have made, stewed tomatoes, salsa, sun dried(in the dehydrator), tomato powder and fermented salsa. This is our first year making tomato powder and fermented salsa and we have realized both were something we were missing in our lives. Tomato powder is quite time consuming for a little reward, but its still worth it in the end. Or so we tell ourselves whilst grinding tomatoes by hand!
Fermented salsa is pretty awesome. It is tangy and fizzy and awesome! The fact that it has millions of gut pleasing probiotics in it as well doesn't hurt either. Below is a picture of one of the few jars we made this week. Honestly we cannot get enough!
We have also been on a bit of a sauerkraut kick lately using up the last of the cabbage from the garden. It's amazing how so little ingredients can create something so tasty and again so full of good for your gut bacteria. Our two favourite combinations at the moment are Dill and garlic along with Carrot and caraway seed.
We ended up with a few dozen more beets than we thought we would. Last year we sold out and had people asking for more. This year we plant more and no one wants any. Just the way things work out some times! Next weeks plan is to start some beet kvaas. Its a fermented beet drink. We are also going to try fermenting beets for a probiotic pickled beet. If we have any left then beet powder and maybe a few pots of borscht should get rid of them.
Our last word on fermenting will be a quick mention to our Vegan Bok Choy Kimchi. It is a power house both in taste and heat, but it has become an necessity at lunch time. For something we created on our own it turned out pretty amazing.
